An Icelandic delicacy.
Hangikjöt (lit. hung meat) is a perennial favourite in Iceland and a must at the traditional Icelandic Christmas meal. The meat here is lamb, the world’s best in the opinion of lamb experts everywhere except New Zealand.
During the festive season, it is customary for many farmers from the rural areas to ship out parcels of hangikjöt to their extended family settled in the larger towns; these are highly prized for their authentic preparation.
I spent an afternoon at the Gautlönd farm near Mývatn in north Iceland watching the farmer Jóhann Böðvarsson tend to the cuts before they are retired to the smokehouse next door.
